Carrot juice reminds me of Sunday mornings when mum would call me to the kitchen to come and help with the dinner. My favourite parts of making dinner was making the drink for the table. I would often make carrot juice but being Jamaican carrot juice is never just carrot juice. Cinnamon and nutmeg was always on hand to give a little bit of flavour and give it a little bit of spice. Oh, and there would be lots of condensed milk. Today I’ve revamped the carrot juice sans condensed milk but with a little something extra to create a delicious and healthy juice that is still a treat for a Sunday.

Recipe (makes juice for 1)

6/7 large carrots
Coconut water
Cinnamon
Nutmeg
Vanilla paste

Juice enough carrots to fill half of your glass. Grater a small amount of nutmeg into the juice, add a quarter of a teaspoon of cinnamon, add a quarter of a teaspoon of vanilla paste and stir all the contents together. Add the coconut water to fill the rest of the glass, stir again and drink.

I find this juice lovely and sweet. However, if you prefer more sweetness you could try adding stevia which is low on the GI index.
