Sometimes a day just calls for a cup of tea and scones.
My good friend Sue taught me the beauty of how quickly delicious scones can be made. I love them because from thought to plate you’re done in 30 minutes. Try these, they’re made with buckwheat and honey so lovely if you’re trying to cut down on gluten and sugar.
Gluten Free Scones with Homemade Damson Jam
- 1 cup buckwheat flour
- 2 Tbps honey (or agave)
- 1 oz organic butter
- 1 cup hemp milk (almond milk or organic dairy milk)
- Pinch of salt (sea salt)
- 1 Tsp baking powder
Mix dry ingredients together in a bowl. Dice butter and mix well into the mixture. Make a well in the middle and pour most of milk in. Mix well until you have a doey mixture. Add remaining milk if necessary.
Take a tablespoon and scoop portions onto a greased baking tray. Bake on a high temperature for 15 – 20 mins.
If you want them crispy on top once they are out of the oven leave them to cool on a baking rack. Alternatively if you prefer them soft you can wrap them in a clean tea towel and leave them to cool.
Enjoy with a lovely dollop of homemade jam or honey.x.
Tip: For extra natural sweetness add raisins to the baking mixture.
